During these difficult days when we have time to fill and need a treat, why not have a go at making these easy peasy muffins.I have halved the recipe which would make 12 muffins which might be too many so you will get 6 muffins or, if you use smaller paper cases, about 8 or 9 cakes.They will keep for several days and freeze well.
Easy Peasy Muffins
1 and1/2 cups self-raising flour
1 cup sugar (caster or granulated)
1/2 cup oil (any kind)
1/2 cup plain yoghurt
1 egg, beaten
Use the yoghurt carton as a measure i.e. 1 carton = 1 cup
- Sieve the flour into a bowl. Add the sugar and mix together.
- Add the oil, yoghurt and egg and beat together till well mixed.
- If the mixture seems too thick, add a little milk.
- Bake at 180 C for 25 minutes if you make muffins or 20 minutes for smaller cakes.
You can vary the recipe by adding:
1 tablespoon sieved cocoa powder and some choc chips
1 small mashed banana
1 small chopped apple and some cinnamon
some blueberries
The mixture can be put in a lined loaf tin ( 20cm by 12cm ) and baked for about 40 minutes. You can add the grated rind of 1/2 a lemon and make an icing with icing sugar and the juice of 1/2 a lemon for a delicious lemon loaf cake.
